Rosa Bianca is an heirloom variety of eggplant with rosy pink and white skin. They are plump and creamy and mild in flavor.
Store in a plastic bag in the refrigerator.
These eggplants are harvested before many seeds develop and are thus less bitter than a very large eggplant. Picked fresh, and delivered to you with in a few days for the best taste. They are fleshy in texture and so makes for a great substitute for meat in a vegetarian dish.
