The Fontaine Family has been cultivating this land for centuries. Now it is up to Philippe, his daughter Salomé, and her husband Louis-Antoine to maintain the family history here. 

This is a style called Blanc de Noirs, or white from black. A white sparkling wine made only from black (red) grapes. The result tends toward the fuller/fleshier fruit experience.

Grape: Pinot Noir 70%, Pinot Meunier 30%

Region: Balnot-sur-Laignes, Côte des Bar, Aube, Champagne, France

Winery: 24 months on lees ‘sur latte’ (on its side rather than cork down)
