Quesadillas With Corn And "huitlacoche"

Huitlacoche can be purchased fresh still on the corn from your local farmer or online in a can or frozen.

Serves 4


INGREDIENTS
1 shallot, finely minced
2 cloves of garlic, minced
4 tablespoons of butter
1 cup of fresh corn
1/2 lb of Huitlacoche
1 cup of shredded gruyere or any other white cheese that melts well
8 corn tortillas


DIRECTIONS
Start by removing the huitlacoche from the corn. Wash and set aside.

In a pan melt the butter and saute the shallots, garlic until fragrant. Add the corn and huitlacoche and cook until the huitlacoche releases all its black ink and it is fragrant. Set aside. Keep warm.

Turn your griddle to medium heat. Heat up your tortilla for a few seconds, add a handfull of cheese and the huitlacoche filling. Let the tortilla become malleable and fold. Turn the quesadilla so it can crisp up a little bit on the other side and all the cheese can melt. Serve hot with a side of avocado.
