Lustau Dry Vermouth Jerez

The dry version of Vermut from this Sherry house is a new addition. They use their manzanilla from Sanlúcar as a base before infusing it with a variety of herbs. The main botanicals of wormwood, thyme, marjoram and chamomile are both distinct and effusive. The Sherry base gives a layer of tart green apple, oily texture and drying briny character. This should be perfect for a Bamboo cocktail.
