  • New England American East Coast yeast is an ale strain selected specifically for it s ability to produce a unique fruit-forward ester profile desired in East Coast styles of beer.  A typical fermentation with LalBrew New England yeast will produce tropical and fruity esters, notably stone fruits like peach.  Through expression of a beta-glucosidase enzyme it can promote hop biotransformation and accentuate hop flavor and aroma.  This yeast strain exhibits medium to high attenuation with medium flocculation, making it a perfect choice for East Coast style ales.
  • Pitching rate is 100-200 grams per hectoliter.  Fermentation can be completed in 7 days, a bit slower than most ale yeast strains.  Can be re-pitched just as you would with any other type of yeast.  Dry pitching is the preferred method of inoculating wort.  This method is simpler than rehydration and will give more consistent performance and reduce the risk of contamination.  Simply sprinkle the yeast evenly on the surface of the wort in the fermenter as it is being filled.
  • Attenuation is Medium to High at 78-83%
  • Flocculation is Medium
  • Lag phase can be longer compared to other ale strains, ranging from 18-36 hours
