Distillery Information

De Luze Extra Cognac is a blend of eaux-de-vie from Grande Champagne and Petite Champagne distilled at Domaine Boinaud. Tasting age is 35 years and more in a beautiful decanter bottle.
Cognac is a category of Brandy name named for the Cognac region where it is produced. This grape-based distillate is a protected French appellation d'origine contrôlée (AOC), which requires the adherence to specific rules during production of the spirit.Classification and age of the different types of Cognacs: VS, VSOP, XO, EXTRA. An cognac is the result of a blend different eaux-de-vie, sometimes more than a hundred. Its age is determined by the youngest of the eaux-de-vie used into its composition.Aging. Once distillation is complete, it must be aged in Limousin oak casks for at least two years before it can be sold to the public. It is typically put into casks at an alcohol by volume strength around 70%.
Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
Cognac distillation is performed in a two-stage process, with a specific Charentais copper still, with its pot (or boiler), its swan's necks ans its cooler and its condensing coil. The white wine, harvested in the Controlled Appellation Area, is introduced in the pot and brought to the boiling point.
